Starting as a whisky cask trader, we are used to buying casks without tasting any samples. Nevertheless, we always get samples drawn for our customers (usually other independent bottlers) so they know exactly what they are buying. We do taste the samples ourselves too! This is when we discover some incredible casks that are just too good to pass on. Therefore, we bottle these casks under “Warehouse Reserve”. They are always bottled at cask strength, unchill filtered and natural colour.

Sometimes we come across that have great potential but missing something. Or sometimes we think that it would be interesting to add some more flavours and complexity (or oomph) to the spirits. Either way, we do love a bit of secondary maturation on the side. We source our wood carefully and directly, and we kept most of information about the casks that are used for re-racking. These spirits are also bottled under “Warehouse Reserve”.

An explorer of flavours…

that does proper investigations.

We do love some quality experimentation here. Not the experiments of simply putting different whiskies in random “sherry” casks from random bodegas and see how they turn out, or bottle the casks when they taste alright. We love compare and contrast, we want our friends to understand flavours, their origins and their interactions with one and other. Importantly, we try to keep all control variables the same.

So we carefully design and carry out a series of experiments in our warehouse that help us and hopefully you to understand flavours.

who hugs every cask that comes in.

Every cask that comes into our warehouse is unique, and we love them all. Operating our own warehouse meaning we need to do everything ourselves, from receiving casks to bottling the spirits, from drawing and evaluating cask samples to cleaning the toilet.

It is hard work, but we love every bits of it. It also brings us a lot closer to the spirits that we hold dear and respect!
